What you will do

• Lead the entire back-of-house operation of the signature dining restaurant under the Creative Culinary Director.
• Direct, motivate, train, coach, evaluate, and retain the culinary team.
• Develop menus and specialty menus, including changes based on product mix analysis and guest feedback.
• Manage food costs, inventories, purchase orders, operational controls, and budget forecasting.
• Provide high-quality food offerings for VIP guests, casino operations, and special events.
• Partner with front-of-house and training teams to resolve guest concerns and maintain service, safety, and sanitation standards.

Requirements

• At least five years of experience as a high-end Sous Chef or restaurant Chef is highly preferred.
• Two-year degree in culinary arts.
• High-volume wok experience.
• Ability to analyze Food and Beverage data, reduce food costs, and support budgetary forecasting.
• Strong administrative, computer, verbal, written communication, and team leadership skills.
• Ability to work onsite in a hectic, fast-paced casino environment and frequently stand, walk, taste, smell, and lift up to 50 pounds.
