What you will do

• Establish and maintain an externally funded research program focused on muscle biology.
• Conduct basic and applied research on postmortem muscle biology, meat quality, and biochemical mechanisms affecting fresh meat attributes.
• Use the Meat Science Center for Innovation, research laboratories, and livestock resources to support research activities.
• Secure funding from federal agencies, foundations, and industry partners.
• Publish findings in peer-reviewed journals and present results at professional meetings.
• Collaborate with faculty, researchers, extension personnel, and university system partners while contributing to teaching, extension, and college activities.

Requirements

• Ph.D. in Animal Science, Meat Science, Food Science, or a closely related field.
• One to two years of relevant work experience.
• Clearly articulated research plans in muscle biology.
• Ability to secure extramural research funding and publish in peer-reviewed journals.
• Excellent oral and written communication skills and the ability to work collaboratively in an academic environment.
• Availability to work beyond normal office hours and/or on weekends.

Nice to have

• Success securing extramural funding and an established publication record in muscle biology, meat quality, or meat science.
• Familiarity with meat laboratory operations, HACCP principles, and regulatory requirements for meat research.
• Understanding of and commitment to the mission of 1890 land-grant institutions.
