Sous Chef

Location: Yamba, Australia; onsite kitchen role with a 7-day roster

What you will do

• Support the Head Chef with daily food preparation, cooking, and kitchen operations at Tides Kitchen and Bar.
• Lead, train, and mentor kitchen staff while maintaining food safety and sanitation standards.
• Collaborate on menus and daily specials using seasonal ingredients and responding to customer preferences.
• Monitor inventory, order supplies, maintain records, and control kitchen costs and waste.
• Check dishes for quality and presentation before service.
• Assist with team rosters in line with budgets and the Hospitality Award.

Requirements

• Minimum 5 years of hands-on experience in kitchen operations, including restaurant and functions catering.
• Formal qualifications in commercial cookery or equivalent professional kitchen experience.
• Experience leading, coaching, and mentoring kitchen teams.
• Strong organization, customer service, interpersonal, communication, and computer skills.
• DoFoodSafely Certificate of completion.
• Flexibility to work varying hours across a 7-day roster in Yamba, Australia.
