What you will do

• Lead kitchen operations across Acacia Restaurant & Garden Bar, room service, conferencing, events, and banqueting.
• Coach and develop the culinary team while building accountability, engagement, and professional capability.
• Drive menu development, culinary innovation, service quality, and continuous improvement.
• Manage food and labour costs, inventory, purchasing, waste control, budgeting, and forecasting.
• Partner with Food & Beverage, Conference & Events, and hotel leadership teams to deliver strong guest experiences.
• Maintain compliance with food safety, HACCP, hygiene, and Health & Safety requirements.

Requirements

• Proven experience as an Executive Chef or senior culinary leader in a hotel, conference and events, or high-volume hospitality environment.
• Demonstrated ability to coach, mentor, and develop high-performing teams.
• Strong commercial skills in food cost control, labour management, budgeting, and forecasting.
• Experience managing restaurant, conferencing, events, and banqueting operations.
• Strong organisational, communication, and stakeholder management skills with a hands-on, solutions-focused approach.
• Flexibility to work a rotating 7-day roster, including evenings, weekends, and public holidays.
