Restaurant Manager - Red 8

Red 8 is an Asian restaurant serving Cantonese dim sum, Hong Kong-style barbecue, wok-fired noodles, curries, fried rice, and regional specialties from China and Southeast Asia as part of the Wynn Las Vegas team.

What you will do

• Manage daily restaurant operations, efficiency, profitability, and guest service.
• Ensure compliance with health department standards, food safety regulations, and company procedures.
• Oversee inventory, cost control, menu updates, and financial performance.
• Lead food and beverage personnel through hiring, scheduling, work assignment, performance reviews, training, and engagement.
• Resolve guest concerns and conduct departmental pre-shift meetings.
• Manage employee relations and human resources responsibilities, including understanding the collective bargaining agreement.

Requirements

• Previous Food & Beverage experience and at least two years of management experience, preferably in a high-volume luxury resort.
• Clear written and verbal English communication is required.
• Strong leadership skills and the ability to motivate and develop team members.
• Ability to obtain and maintain all required licenses or active work cards.
• Must be 21 years of age or older.
• Ability to work efficiently under pressure across evenings, weekends, holidays, and multiple priorities.

Nice to have

• Experience with Chinese cuisine.
• Mandarin and/or Cantonese language skills.
