Head Chef (Hospitality)

Location: South Durras, NSW 2536, Australia. On-site role at NRMA Murramarang Beachfront Holiday Resort; staff accommodation is available.

What you will do

• Lead and develop the kitchen team with a hands-on approach.
• Oversee food operations across the Bistro, Skippy's Takeaway, events, weddings, conferences, and group bookings.
• Design and deliver creative menus using fresh, seasonal, and locally sourced produce.
• Manage rosters, ordering, food costs, waste, portion control, stock, and menu performance.
• Partner with food and beverage leaders on menu development, supplier management, and governance standards.
• Maintain food safety, hygiene, storage, temperature checks, and compliance records.

Requirements

• Formal qualification in Commercial Cookery.
• Proven experience as a Head Chef, Executive Chef, or Senior Sous Chef in a resort, hotel, club, restaurant, or hospitality venue.
• Strong experience with events, weddings, conferences, and group functions.
• Current Food Safety Supervisor Certification.
• Experience managing food costs, stock control, ordering, kitchen budgets, and operational governance.
• Strong leadership, planning, organisational, communication, and team development skills.
