Salary: USD 90,000β110,000 per year, bonus eligible

What you will do
- Lead the planning, execution, and implementation of culinary initiatives across Universal Studios Hollywood and CityWalk.
- Manage multiple large-scale culinary projects and coordinate with Operations, Training, Sourcing, Quality Assurance, Production Kitchen, and Shared Services.
- Develop and improve standardized recipes, culinary SOPs, preparation procedures, plating guides, training materials, and operational standards.
- Support new menu launches, seasonal offerings, equipment changes, venue assessments, tastings, food photography, and on-site operational rollouts.
- Lead product evaluations, yield studies, hold-time validations, production assessments, and process improvements.
- Manage direct reports while ensuring food safety, sanitation, HACCP, regulatory compliance, and operational excellence.
Requirements
- Graduate of an accredited culinary school.
- At least 7 years of progressive culinary experience, including leadership in a high-volume restaurant, production kitchen, theme park, resort, or similar environment.
- At least 3 years of culinary management experience.
- Strong knowledge of culinary operations, food production systems, menu implementation, recipe development, SOPs, and operational documentation.
- Experience leading training initiatives and venue-level operational support, with strong project management and cross-functional leadership skills.
- Must work full-time on-site at an NBCUniversal-designated worksite.
Nice to have
- Los Angeles County Food Handler Certification.
- HACCP certification or equivalent food safety training.
- Experience supporting multi-unit food and beverage operations.
